Team Spotlight: Carol Ensminger

Carol is a busy mentor, Bible teacher, and media solutions expert. She designs and develops websites and social media campaigns designed for authors and speakers. In addition to her work with Brookstone Creative Group, Carol co-leads Faith and Food which focuses on teaching women to treasure their temple through a healthy lifestyle. She also launched Detox the Crap out of her passion for helping young girls.

Carol resides in Arizona and together, she and her husband have six children and nine grandchildren. She enjoys reading, writing, spending time with her grandchildren and traveling wherever Jesus leads her.

Favorite book and why?

Reading was painful for me all through my school years, and I despised it more than doing my homework. Eventually, I outgrew my dislike for reading, and now I read dozens of books a year. My favorite book of all time is one I read daily—The Holy Bible. Whatever my current or emotional struggle is, I know I will find help and hope in this wondrous book.

Favorite ice cream?

When I’m not reading, I love to cozy up in my lounge chair with Netflix.  Add a Mint Chocolate Chip Ice Cream Bar from Klondike. A-mazing. 

What’s one thing people wouldn’t know about you just by looking at you?

I dislike getting ready for the day. It’s such a waste of my precious time. Instead, I’d rather be reading, studying the Bible, or even working, which is why you’ll find me often working in my jammies. 

Favorite quote?

Over the years, I’ve had favorite quotes I go to time and time again, but I would say my favorite life quote is from Eugene Peterson when he writes his version of John 17:4. “I glorified you on earth by completing down to the last detail what you assigned me to do.” I believe that as long as we have breath, we have an assignment to take care of, and I’m going to preach it until we all believe it.

Coffee or tea, hot or cold?

Tea! I love it hot during winter and fall and ice tea during the spring and summer months. Although I have a whole shelf in my cupboard dedicated to a wide range of tea varieties, Oolong, Green, and Mint are my go-to’s. Paired with a rocking chair in the shade and its heaven on earth. 

What is the title of the current chapter of your life?

Favorite candy?

I’m slightly seriously obsessed with all things chocolate. I can eat just about any variety—from See’s Chocolate Walnut Fudge to a simple solid chocolate bar from Hershey’s. 

If you could turn any activity into an Olympic sport, what would you have a good chance at winning a gold medal for?

Eating. I’m really good at it. 

What is one song you have completely memorized?

The Wheels on the Bus. I know every verse, the signs to go with it, and even made up a few new lyrics that make the little people in my life laugh. However, I’m not sure they are laughing at my words because my singing ability has been known to makes dogs howl and babies cry. It is a natural gift.

What fad or trend do you hope comes back?

Time does weird things to a person, and the older I get, the more I want the fanny pack to make a major comeback. Lately, I’ve seen them in fashion magazines and on the runway, but they don’t match the fanny packs of the 80s, and until they are, I’m not buying it.
